Mac ‘n Cashew Cheese!
- 1 cup raw cashews
- 1/4 cup nutritional yeast
- 1/2 tbsp. paprika
- 1/2 tsp. garlic powder (optional)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tbsp. soy sauce
- 1 cup water
- 8 oz. noodles of your choice! (I use quinoa pasta)
Start by boiling your noodles. That is the most time consuming part of this entire dish!
Toss your cashews in the food processor and blend until a fine powder. Add the rest of the dry ingredients and blend until mixed. Then add the soy sauce and water. Blend until smooth. It isn’t necessary to use the entire cup of water, I add a little bit and continue to do so until I get the consistency I prefer!
Strain your noodles and mix it with the cashew cheese!
It’s best to eat it immediately, the cashew cheese tends to thicken up over time. Though, that’s never stopped me from covering it up and having left overs the next couple days! I went a little heavy on the spices this time around, so feel free to adjust!
